The mixture of local varieties of long-stemmed cider apple gives the landscape a unique aspect the landscape that establishes the Pays d'Auge's reputation. The climate and soils are ideal for cultivating these cider apples.

 

Elaboration         

This exceptional Hors d’Age Calvados, which has spent 25 years aging in oak barrels, is made from the double distillation of cider. The first distillation transforms it into what is known as petite eau or brouillis. The second enables it to become Calvados, in which it loses half of its volume, meaning it is necessary to use about 14 litres of cider to make one litre of Calvados. The reference to the vintage corresponds with the year of distillation.

 

Tasting Notes

This magnificent Calvados, intensely golden in colour with subtle mahogany notes, has a complex nose dominated by oak aromas and is extremely well balanced. It enjoys a silky roundness, emphasis on the fruit, it flourishes in the mouth with subtle notes of undergrowth.
